At Market Buffet, the smoking process is pure magic. This slow and low process can transform a traditionally tough meat into an incredibly tender, slightly sweetened, perfect cut of meat.
At Market Buffet BBQ and Smokehouse, we love all meat but not every meat is made for smoking. In fact, lean cuts tend to get overcooked and become almost inedible. When we purchase our smoked meat cuts, we begin with 100% grade AA or above Canadian meat. We then look for cuts that have that perfect combination of fat, texture and flavor that will partner well with the low and slow process of smoking.
Once back in the restaurant, we don’t mask the flavour of our meats with marinades. Instead, we make our own in house dry rubs and apply them to the raw product 12-24 hours prior to smoking. These rubs are hand crafted to bring out the meat’s natural flavours, so that with each bite you taste meat not marinade.

One of the best meats for smoking are ribs. Full of fat and collagen, putting ribs into a smoker creates that wonderful fall off the bone, succulent goodness, that you can only get from a beautifully smoked rack. Standard boiled and baked ribs will fall short in comparison.
